Eating a vegetarian meal a couple times a week is a good idea. I don't have anything against eating meat. Chicken is one of my favorite foods. Meat and vegetables both have nutrients our body needs. However, I believe in moderation with everything. It's good to switch things up. Next time you make or order pizza get a vegetarian one instead. What about having a vegetarian soup? Got a taste for a hamburger? Eat a meatless one. It doesn't have to be about eating meat and potatoes everyday. It can just be about eating potatoes and vegetables.
Also, many people are not getting enough vegetables in their diet. This is a good way to make sure you get them in. Here are two good websites that can help you get some good vegetarian recipes it's called The Vegetarian Resource Group and Vegetarian Secrets Revealed.
Some people are allergic to dairy products. For them milk and cheese is out of the question. Even though you may not be 100% vegan you can find some recipes that will help you find recipes that are dairy-free Christinacooks.com is an excellent website where you can find vegan(non-dairy) recipes. She also has some cookbooks you may be interested in getting. Even if you are not vegan or is not allergic to dairy you might still want to try some of these recipes.
